I miss her.........she was such a blessing. I am named after her. All those that knew her loved & adored her just the same. June 30, 1994, 11 days after her surprise 80th birthday celebration the Lord had other plans. He called her home to heaven in her sleep. I had just given birth to our first child 6 months prior. She was a wonderful friend, mentor, listener & prayer warrior, but to me she Was MY Mammaw, Joshua's Great Grandmother....and future Joseph & Luke's. She never got to meet my younger two children, the second who was named after her daddy (which was a promise I made to her prior to her death). She was loving, gave huge slobbery kisses, lots of hugs, was patient and a GREAT cook. One of my fondest and favorite recipes from her is this one. I use it for an alternative to some of my chocolate cakes.
Mammaw's Chocolate Frosting
1 lb powdered sugar (3 1/2 cups)
3/4 c cocoa powder
1/4 tsp. salt
1 stick butter-melted
1 tsp vanilla
strong coffee
Sift together the first three ingredients and add to the melted margarine. Add coffee until it's a spreading consistency. Then add your vanilla.
